




Our practice in the cellar is straightforward: All wines ferment and age in neutral oak burgundy barrels. Nothing is added, nothing is taken away. The wines are racked into tank just before bottling and most, but not all, see a small amount of sulphur at this time. Nothing is fined nor filtered.
In terms of vinification our red wines vary a bit, but 95% of our Riesling is treated the same. We believe this allows each of our unique sites the best opportunity for clarity and distinction, warmly conceding that the expression of a vineyard is best left to whatever nature has dealt us for the year, rather than making manipulations through complicated winemaking. Substantial or slight, every choice we make in the cellar sways the wine in one way or another, so we do our best to really do as little “winemaking” as possible to gently guide our wines to their final form.
